Veganomicon's Quinoa Salad with Black Beans and Mango

This week's mission: select a recipe for a potluck that can be made in advance, sit around in a cooler for a while before the meal is served, satisfy a hungry vegan, and please non-vegans even though it will compete with pizza. Veganomicon to the rescue with this vibrant, tropical, addictive quinoa salad that is a perfect room temperature dish. A salad so pretty and delicious that it will be one of my go-to dishes for potlucks this summer. If you don't have your own copy of Veganomicon yet, you can check out the recipe here.

Let's see, a couple of discoveries since I last posted include vegan pizza with Daiya cheese at Katie's Pizzeria in St. Louis. Plus, cheddar and mozzarella Daiya retail packs available at Whole Foods. Welcome back to my kitchen, gooey quesadillas!

  3. I made this last summer and loved it! I did add a little chopped avocado before serving though ... because you can't go wrong with avocado.

  6. Oh No Lisa! Two things on your blog right now--first the delish dish--and I have that cookbook, must give it a try! AND there is a Pyr with the most adorable face and it is killing me to see him up for adoption at the St. Charles Humane Society! Please, someone go get him before I do--my home runneth over with Pyrs! (Lisa, thanks so much for posting his face--he is precious!)

  8. That salad is always a crowd pleaser. I always make quinoa salads for omni-esque gatherings and they always seem to make everyone happy.
    Now, if only I could get me some of that vegan cheese!

  16. I can't find the vegan pizza on the Katie's Pizzeria menu online...can anyone help? Which do you like better, the vegan menu at Scape or Niche? Thanks! Awesome blog - really resourceful :)

  19. Niche was not prix fixe. We called ahead about a vegan meal and when we arrived they gave us several options they would veganize from the menu.

  21. Katie's Pizzeria does not have vegan cheese. Maybe they did in the past, but they don't now.
