VeganMoFo: Tacos



These tacos feature the taco "meat" from The Native Foods Restaurant Cookbook. I've tried a couple of recipes so far from it, this one and the tofu feta. Plenty of other recipes look fun such as Totally Stacked Enchiladas and, of course, the Mad Cowboy (over the top stuffed baked potatoes with vegetables, BBQ sauce, and Ranch dressing!). We enjoyed the taco filling, but I thought it was a little salty and will probably reduce the soy sauce next time. The recipe is very quick to make, and tastes great along with your favorite taco fixin's. We stuffed blue corn taco shells with the "meat", guacamole, onion, tomato, salsa, and shredded baby spinach. Up tomorrow, my favorite guacamole recipe!

    where do you get your blue corn taco shells from? those are great! and i look forward to your favorite guacamole recipe - 'cause i puffy heart me some guacamole! mmmmmmmm! yay!

  6. Yay tacos! I adore them so. That guacamole looks amazing..but avocados make me ill. I still have guacamole sometimes though because it's so delicious...I just endure illness afterwards and tell myself it was worth it. So I'm looking forward to your recipe! :)

  8. Yum tacos! Mmmmmmmm. Your spread looks fantastic, and I really love the bowls of guacamole and tomatoes sitting there waiting to be chowed down on. Yummy!

  13. Mexican food is my all time favourite - making it tonight as it goes, I could eat it every day in all honesty. Those blue Taco's look amazing - I've never seen them before. Real pretty.

  16. Hey guys, thanks for all the great comments! Sounds like tacos are really popular, and I think we'll all be singing the Wing-Its' taco song next time we have them.

    The shells are Garden of Eatin' brand, Jessy, and I think I found them at Whole Foods.
